Spinach Quiche

  1. Thaw spinach just enough to make a ball.
  2. Squeeze until most all of juice is out.
  3. Mix spinach with Ricotta cheese.
  4. Add nutmeg and 1 egg (well beaten).
  5. Fold in 4 tablespoons of Parmesan cheese and 1/2 cup flour.
  6. Add Cheddar cheese and blend well.
  7. If mixture seems too dry, add another well beaten egg (I always do). Put mixture in pie shell (unbaked) and sprinkle remaining 4 tablespoons Parmesan cheese on top.
  8. Bake in 350u0b0 oven for 35 to 45 minutes, until brown on top (45 minutes if 2 eggs are used). Enjoy!
