Grilled Salmon
- 2 Single portion boneless salmon filets, about 4-6 oz each
- 1 cup diced onion
- 2 cups chopped mushrooms
- 1 tablespoon minced garlic
- 1 tablespoon fresh thyme leaves
- 2 tablespoons lime juice
- chives for garnish
- olive oil
- peach, mango or other fruit salsa
- salt and pepper
- Mix lime juice and 2 tablespoons olive oil; salt and pepper to taste. Saute onions, thyme and garlic in olive oil until translucent but not caramelized, about 2 minutes. Increase heat to medium high and add mushrooms which should be about twice the size of the diced onion before cooking. Cook while regularly stirring until mushrooms have reduced to the size of the onions and are slightly browned, about 8 minutes. Hold warm.
- Brush salmon filets with lime mixture and grill, skin down first, for 8 - 12 minutes depending on thickness, brushing with lime again and turning halfway through.
- When salmon is cooked place filets on a bed of the mushroom-onion mixture and top with fruit salsa and chive spears garnish
