Apple Walnut Cake
- 1 c. butter or oleo
- 2 c. sugar
- 2 large eggs
- 1 Tbsp. vanilla
- 2 c. sifted flour (cake)
- 1 tsp. baking powder
- 1/4 tsp. salt
- 8 oz. sour cream
- 1 c. peeled, chopped finely apple
- 1 c. finely chopped walnuts
- 2 Tbsp. brown sugar
- 1/2 tsp. cinnamon
- Beat butter on medium speed with an electric mixer until creamy.
- Gradually add sugar, beating well.
- Add eggs, one at a time, beating after each addition.
- Stir in vanilla.
- Combine flour, baking powder and salt.
- Add flour mixture to butter mixture alternately with sour cream, beginning and ending with flour mixture.
- Mix at low speed after each addition, just until blended.
- Pour half of the batter into a greased and floured 12 cup Bundt pan. Combine finely chopped apples and next 3 ingredients; spoon over batter in pan, leaving a 1/2-inch border around center and outer edges.
- Add remaining batter.
- Bake at 350u0b0 for 50 to 55 minutes.
