Tuna Melt In A Hurry
- 1- 6 oz. Can quality water packed TUNA
- 2- Sandwich size slices WHOLE GRAIN BREAD
- MAYONAISE - enough to lightly coat one side of bread (low fat/carb if possible)
- 1- medium size TOMATO, diced
- Basil - 1/4 tsp dried, 1/2- 3/4 tsp. fresh
- 2 oz-SHREDDED CHEESE (Try Mozzerella or Pepper Jack)
- SALT and PEPPER to taste
- 1. Preheat oven to broil setting and place a sheet of aluminum foil on cookie sheet for easy clean up.
- 2. Lightly toast slices of bread.
- 3. Spread toast with a very thin layer of mayonaise and place on foil.
- 4. Drain tuna, flake, and place 3 oz on each piece of toast. Salt and pepper to taste.
- 5. Place even amounts of tomato on tuna, salt to taste.
- 6. Finish by sprinkling even amounts of basil and then cheese on each slice.
- 7. Broil on medium rack until cheese melts and starts to bubble. (3-5 Min.) Immediately transfer to plates and serve.
