Super Seafood Salad
- 1 medium can tiny shrimp
- 1 medium can crabmeat
- 2 medium size tomatoes, cut into wedges
- 2 hard boiled eggs, cut into wedges
- 1/4 c. minced onion
- 1 Tbsp. lemon juice
- 1/2 tsp. dried parsley
- Mrs. Dash Original Blend seasoning (or seasoned salt of your choice)
- salad dressing of choice
- lettuce leaves
- Drain crabmeat and shrimp into a strainer; rinse well using cold water.
- Let stand in bowl of ice water for 20 minutes to develop flavor.
- Meanwhile, line chilled salad plates with layers of lettuce leaves.
- Place tomato and eggs around outside edge. Set aside.
- Drain shrimp and crabmeat well, using double thickness of paper towels.
- In a medium bowl, toss shrimp and crabmeat with lemon juice and minced onion.
- Place mound of shrimp, crabmeat mixture in center of plate.
- Sprinkle with dried parsley and Mrs. Dash.
- Place in refrigerator at least 30 minutes before serving. Serve with crackers and dressing of your choice.
- Ranch and Lite Thousand Island are both excellent with this salad.
