Mj'S Pineapple Mango Salsa
- Chop finely. (Squeeze out juice of first 3 fruits
- w/ a slotted spoon, otherwise it's too soupy):
- 1/2 fresh pineapple
- 1 large or 2 small mangos
- 1/2 cantelope
- Chop in bigger chunks:
- 1-2 ripe avocados
- 1/4 cup onion
- 3/4 cup fresh cilantro
- 1 cup fresh strawberries
- 1 large garlic clove minced (I crushed mine)
- 1 T olive oil (I used citrus infused)
- 1 T rice vinegar
- 1T lime juice
- 3 T fresh basil (use scissors to cut
- not too finely)
- salt and pepper to taste
- Mix all together. Serve at nearly
- room temp. to taste all the ingredients better.
