Miriam'S Apple Bundt Cake
- 6-7 apples
- 5 tbsp sugar
- 2 tsp cinnamon
- Allspice, nutmeg (optional)
- Raisins, chopped nuts (optional)
- 4 eggs
- 1 cup oil
- 2 cups sugar
- 1/4 cup orange juice
- 2 tbsp grated orange rind
- 1 tsp vanilla
- 3 cups flour
- 2 tsp baking powder
- 1 tsp salt
- Grease and flour a 12-cup Bundt pan. Preheat oven to 375.
- Peel, core and cut apples into small pieces.
- Mix apples with sugar & cinnamon. Add allspice and/or nutmeg if using, as well as raisins & nuts.
- Whisk eggs, oil, sugar, orange juice, orange rind, & vanilla.
- In a separate bowl, mix flour, baking powder, & salt. Stir in liquid batter.
- Drain apples of any cinnamony juice that has accumulated.
- Pour 1/3 batter into pan, then 1/2 apples, another 1/3 batter, the remaining apples, and finish with the remaining batter.
- Bake for 1.5 hours or until toothpick comes out clean.
