Linguine With Shrimp
- 6 ounces linguine
- 2 tablespoons Olive Oil
- 1/4 cup sliced shallots
- 1 14 and 1/2oz can diced tomatoes in olive oil, garlic and spices
- 1 tablespoon chopped fresh Basil
- 1/3 cup heavy whipping cream
- 1/2 pound medium shrimp cooked
- 1/8 teaspoon red pepper
- 1/3 cup fresh basil julienned for topping
- Cook Linguine. In skillet over medium high heat, heat the olive oil. Add the shallots and saute about 4 to 5 minutes or until the shallots are tender. Add the tomatoes and the chopped basil and bring to a boil. Lower the heat and simmer for 5 minutes. Add the heavy cream and return to boiling. Add the shrimp and the ground red pepper. Heat sauce through. Pour sauce over linguine and top with julienned basil leaves
