FeatherS Mexican Casserole
- Prego Spaghetti Sauce
- 12 oz. Red Salsa
- can of enchilada sauce
- container sour cream
- 2 cans sliced olives
- 2 cans green chiles (chopped or whole for a layer)
- Mix above ingredients together.
- Either shredded chicken breast (6 halves) or 1.5-2 pounds ground turkey. Saute with onion, green pepper, mushrooms, etc.
- 1 can Refried beans
- 1 bag tortilla chips
- 1 pound Jack and Cheddar cheese
- Rice (optional)
- Spoonful sauce in bottom of casserole dish. Layer tortilla chips, globs of beans, layer of cheese, chicken of turkey, spoonful of sauce; repeat until you reach the top. Finish with sauce, top with parmesan cheese if desired. Bake at least an hour at 350.
