The Most Yummy Chocolate Mousse
- 4 oz good quality semi-sweet block chocolate (prefer organic)
- 2 tablespoons strong black coffee
- 1/3rd oz. of unsalted butter (yes the real thing!)
- 2 eggs, separated (they won't like it, but do it anyway!)
- Pinch of salt
- Pinch of cream of tartar
- Finely grated zest of one small orange (Microplane Zester Grater is the best!)
- I tablespoon of Grand Marnier or good orange liquor
- Whipped Cream (full cream holds it shape better- ready made in can is OK)
- (You can leave out the orange zest and substitute Dark Rum, Kahlua or Bailey's Irish Cream if you do not like oranges
- Melt the chocolate over a low heat with the coffee. (I use a double boiler or place mixture in a bowl over a hot pan of water to prevent burning) Mix in the butter, and when melted, add the egg yolks, stirring in well. Turn off the heat. Stir in the zest and liquor. Beat the egg whites with the salt and cream of tartar until they reach a soft peak. Cut and gently fold the egg whites into the chocolate mixture with a spatula. Spoon into individual ramekins or martini glasses, cover with plastic wrap, and chill for at least two hours
- Top with a generous dollop of whipped cream.
- For an added decorative flourish add a Pirouline, shaved chocolate or chocolate sprinkles.
- Last, but not least, enjoy every decadent mouthful!
