Summer Light Cilantro Chicken
- 1 & 1/2kg chicken with bones
- 1 tub of low fat natural yogurt
- 1 red onion chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 3/4 tsp turmeric powder
- 1/8 of a tsp red chili powder
- salt to taste
- 1 tablespoon canola oil
- 2 tablespoons of lemon juice
- A large bunch of cilantro roughly chopped
- 1 green chili - split and seeds remove
- 1. Mix the ginger, garlic, turmeric powder, red chili powder with the yogurt and pour over the chicken.
- 2. Leave the chicken and marinade in the fridge for 2 hours.
- 3. Chop the onion.
- 4. Heat oil in a deep saucepan.
- 5. Add the chopped onions and lightly saute till they look translucent.
- 6. Add the chicken and the yogurt marinade and mix well.
- 7. Cover and cook on low heat for 25 mins or until the liquid separates. Mix occasionally.
- 8. Add the salt, lemon juice, cilantro and green chili and cook on a very low flame for about 5 minutes.
- Serve immediately with rice
- or just have it on its own. Its deliciously light and full of flavor.
