Fried Oysters
- 3/4 cup rice flour
- 3/4 cup corn meal
- 1 tsp salt
- 2 tsp fg blk pepper
- 2 tsp ground cumin
- 1 tsp paprika
- Mix these together well.
- 1 cup half and half 1/2 cup beer 1 TBSP hot pepper sauce
- Mix these together well and have someone finish the beer!
- 1 pint oysters, drained
- For the Cocktail Sauce:
- 1 cup catsup
- 1/4 cup horseradish 2 Tbsp lemon juice
- 1/2 cup chopped parsley
- S & P, to taste
- 1/4 cup minced onions
- Deep fryer or "fry daddy" , pre-heated to 350 degrees F. Canola oil works well for home use in this recipe.
- Put oysters in liquid and drain well, then dip in rice flour/corn meal mix and cook in fryer until golden brown. Drain on paper towels. Keep warm in pre-heated oven if desired. Repeat with other half of oysters. Serve with cocktail sauce.
