Hazelnut Chocolate Smore
- 1 tsp. unflavored gelatin
- 2 1/4 fat free milk
- cup non-fat dry milk
- 4 oz egg beaters or substitute
- 5 tsp sugar substitute like equal
- 1 tsp vanilla extract
- 1 1/2 Tbsp toasted marshmallow, sugar-free syrup (the kind you get at coffee shops.)
- 1/2 cup cocoa powder
- 3/4 cup brown sugar
- 3 Tbsp ap flour
- 1/8 tsp salt
- 3/4 cup fat-free milk
- 1 tsp vanilla extract
- 1 Tbls hazelnut extract
- 1/3 cup sugar substitute
- 2 oz unsweetened chocolate small pieces
- 2 oz semisweet chocolate chips
- 1 oz. egg beaters
- 4 egg whites
- 2 cups fat free whipped cream (store bought)
- 1 cup crushed graham cracker crumbs
- "ice cream"
- start with a small saucepan, add 1/4 cup of the milk and the gelatin. stir over low heat until gelatin dissolves. put aside to cool. Put remaining ingredients in a blender, pulse until smooth, add milk mixture and pulse once more, pour over strainer into your ice cream maker and follow it's instructions. can be made ahead of time.
- "flourless hazelnut chocolate cake"
- Heat oven to 350 degrees. Grease a 13 X 9-inch or square cake pan. Combine cocoa, brown sugar, flour, and salt in saucepan and stir in milk and vanilla and hazelnut extracts and mix until smooth. Heat over low heat (don't boil) stir frequently, until the batter is hot and smooth. Turn off the fire and add the chocolate, stir until melted. Whisk a cup of the batter into egg beaters. whisk egg/batter mix into saucepan. Put aside until room temp. Beat egg whites to soft peaks. Add sugar substitute until stiff peaks form. Stir 1/4 of whipped egg whites into cooled chocolate mixture. Fold chocolate mixture into the rest of the egg whites. Put batter into pan and place in a water bath on the center oven rack. Bake 25-30 minutes the cake will still be soft in center. Cool on a rack, it will finish cooking in the pan. refrigerate until ready to use.
- "fat-free graham cracker cream"
- take 1 cup (about 6 crackers) and chop in food processor into dust. fold into whipped cream and chill.
- "assemble"
- cut a small square of the cake, place in microwave for 25 secs. depending on microwave. Top warm cake with a scoop of toasted marshmallow ice cream and a dollop of graham cream.
