Roasted Sweet Potato Soup With Orange And Ginger
- 6 cups peeled,cubed sweet potatos or yams
- 1 cup coarsely chopped onion
- 1 T olive oil
- 1 clove garlic, minced
- Oil a shallow roasting pan. Add first four ingredients, stir well. Roast, uncovered, at 425 F for 25 minutes. Stir once halfway through roasting time.
- 5 cups broth
- 1 T each grated orange zest and fresh ginger root
- 1 whole clove
- 1/2 tsp each ground cumin and salt
- 1/4 tsp pepper
- Transfer vegetable mixture to a soup pot. Add next 7 ingredients, bring to a boil. Reduce heat to medium-low and simmer for 10 minutes.
- 6 T low-fat sour cream
- fresh cilantro, chopped for garnish
- Working in batches, transfer soup to food processor and puree until smooth. Serve with a swirl of sour cream and top with cilantro.
