Oblivia'S Chicken Crack

  1. Keep chicken broth warm and covered in a pot on the stove.
  2. Cut chicken breasts into 1" pieces and sprinkle with salt and pepper. In a heavy deep pan, heat olive oil over medium-high heat. Add onion and garlic, and cook until tender. Add chicken and cook until it begins to brown. Add rice and stir to coat.
  3. Add 1 cup chicken broth, reduce heat to low, and cook until liquid is absorbed, stirring frequently. Continue to add broth to keep rice covered, stirring frequently. Keep cooking and adding broth until rice is tender. Add cheese and butter just before serving.
  4. Makes 4 servings, often less because it's CRACK.
