Zuccini Pie
- 3-4 medium zuccinis (sliced thin)
- 4 ounces fresh or canned mushrooms (sliced thin)
- 2-3 medium tomatoes (sliced thin)
- 2 eggs
- 1/4 cup milk
- 1/2 teaspoon garlic salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon oregeno
- 3 tablespoons margarine
- 1-2 medium onions (diced)
- 8-10 ounces grated mild cheddar cheese
- 8-10 ounces grated mozzerella cheese
- salt and pepper
- 2 medium pie shells.
- Saute onions, mushrooms and zuccini in margarine. Add tomatoes and cook until tender.
- Beat eggs and milk together.
- Bake pie shells at 350 degrees for 7 minutes before filling.
- Layer saute mixture and cheese twice. Pour egg mixture over the top. Top with cheese.
- Bake for 30 minutes at 350 degrees.
- Add browned hamburger to saute mixture before layering if desired.
