Blueberry Buttermilk Muffin
- 2 cups all-purpose flour
- 1 cup buttermilk
- 1 cup blueberries
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Special Equipments:
- a muffin pan with 12 muffin cups
- 12 foil or paper muffin liners
- Preheat oven to 350u0b0F or 180u0b0C.
- Combine all the dry ingredients in one bowl.Whisk together buttermilk, vegetable oil, egg, and vanilla extract in another container. Add buttermilk mixture into dry ingredients and stir till just combined. Fold in blueberries.
- Divide batter among muffin cups and bake for 25 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
- Makes 12 muffins
