Soft Ginger Spice Cookies

  1. Preheat oven to 350.
  2. Beat together the molasses, margerine, and brown sugar.
  3. Beat in the applesauce the eggwhite, and grated ginger root.
  4. Mix the dry ingredients evenly.
  5. Cut the crystallized ginger into smaller pieces and add as many as you want to the dry mixture (Bigger and more chunks=spicier!).
  6. Stir everything together, being careful not to overstir.
  7. If dough is hard to work with, chill in fridge until it's harder
  8. Generously coat each ball of dough with white sugar.
  9. Bake for 8-12 minutes.
