Masala Chicken
- 3 1/2 pound chicken pieces
- 1 kg boiled peeled potatoes (optional)
- 1 tbsp yogurt
- 1 tsp garlic paste
- 1 tsp ginger paste
- 2 tsp lemon
- pinch saffron
- 1/2 cup water
- 1 kg onions
- 1/2 kg tomatoes chopped
- 2 tbsp tomato paste
- 1/2 tbsp cumin
- 1/2 tbsp coriander
- 1 tsp garam masala
- 1/2 tsp tumeric
- 1/2 tsp red chilli powder
- salt
- 1 tbsp coriander leaves
- 3-4 green chillis
- Cook chicken in the yogurt, garlic ginger and water until tender. Fry onions until golden and crisp. Remove. Fry tomatoes, paste, saffron, salt and all the spices for 3 minutes. Add the chicken. Add onions and reduce to low heat allow to cook stirring occasionally. When chicken is ready, sprinkle with garam masala, lemon and gently stir. Garnish with coriander and green chillis
