Red Hot Cinnamon Cucumber Rings
- 2 gal. (after slicing), peeled cucumber (large), sliced 3/8 inch thick and seeds removed
- 1 Tbsp. alum
- 1 c. white vinegar
- 2 bottles red food coloring
- 2 c. lime
- 8 1/2 qt. water
- 1 oz. red hot cinnamon candy
- 2 c. hot water
- 3 c. white vinegar
- 15 c. sugar
- 8 broken cinnamon sticks
- additional sticks cinnamon
- Soak cucumbers 24 hours in lime and 8 1/2 quarts water.
- Drain and wash the cucumbers well (be careful of cucumber rings.)
- Make a solution with the alum, 1 cup vinegar and red food coloring; add with enough water to cover.
- Simmer 2 hours or until tender; drain. Make syrup of red hot cinnamon candy dissolved in 2 cups hot water, 3 cups white vinegar, 15 cups sugar and 8 broken cinnamon sticks (I add 1 pint more sweetened vinegar.)
- Bring to a boil and pour over cukes.
- Let set overnight.
- Next day drain, bring syrup to boil and pour over cucumbers.
- Do this 3 nights.
- Next day put cukes into jars and pour boiling syrup over the cukes and seal.
