Peanut Butter Surprise Cookies
- 1/2 cup creamy peanut butter
- 4 tbsp unsalted room temperature butter
- 1 cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup granulated sugar (set aside in separate bowl)
- 36 milk chocolate Hershey Kisses, unwrapped
- 1. Preheat oven to 350 degrees. With an electric mixer, mix peanut butter and butter until smooth. Add brown sugar mixing until well combined; slowly add vanilla and eggs and mix until combined.
- 2. In separate bowl, combine flour, baking powder, and salt. Slowly beat dry mixture into wet mixture; stirring until dough forms.
- 3. Using a tablespoon, form dough balls around the Hershey Kisses. Roll until perfectly round and roll into granulated sugar, coating all sides.
- 4. Place dough balls 2 inches apart on a non-stick baking sheet. Bake 10-12 minutes or until tops of cookies are slightly browned. They will not be flat.
- 5. Transfer cookies to cooling rack and cool slightly. Cookies are best when enjoyed warm.
