Beef Stroganoff
- 10-12oz Fillet steak, sliced
- 1 tbsp vegetable oil
- 1 tbsp butter
- 1 small onion chopped
- 4oz button mushrooms, sliced
- 1/4 cup good brandy
- 1/4 cup med dry sherry
- 1/2 cup sour cream
- salt and pepper to taste
- Saute the onions and mushrooms in the oil and butter till soft.
- Put aside and keep warm in the stove on a low temperature.
- Saute the beef season with salt and plenty of fresh ground black pepper, saute for 2-5 mins both sides accodding to taste. Take the pan off the heat, pour the brandy over the beef and ignite
- let the flames die dowm and add the sherry. When the flames have gone return to a gentle heat and simmer for a few minutes till the liquid has halved. Add the onions and mushrooms back to the pan and add the sour cream. Let it all heat through and serve.
