My Hummous Bi Tahini
- 2 cans of Hummous beans, drained and rinsed well with water
- (or soak dried beans overnight with a pinch of baking soda in c old water, drain and rinse thoroughly in the morning and then boil in fresh cold water for 1.5 hours)
- 2/3 cup of tahini (sesame seed) paste *I prefer Cortas or another Arabic brand!
- 3 cloves of fresh garlic, chopped and crushed with 1/2 teaspoon of salt in a pestle and mortar
- 3 freshly squeezed lemons, juiced (have an extra one on hand just in case)
- 1 tablespoon of olive oil
- 1/2 cup of cold water from the fridge
- Garnish: olive oil, cumin, parsley (optional)
- Pop the peels off of the hummous beans and discard the peels. Keep a few beans aside for decoration. (This is time consuming and you can do it without this step but the taste and texture will be affected).
- In a blender, put the hummous beans, tahini, garlic, lemon juice and olive oil. Blend. When the beans blend into the mixture and it becomes thick, slowly add the cold water - this step will make the mixture thinner and fluffy. Adjust according to your own tastes with more lemon juice, salt or tahini. It should have a sharp lemony taste and should be creamy in texture
- Serve with pita bread and/or baby carrots. Garnish with a few hummous beans, olive oil, cumin and/or parsley sprigs.
