My Hummous Bi Tahini

  1. Pop the peels off of the hummous beans and discard the peels. Keep a few beans aside for decoration. (This is time consuming and you can do it without this step but the taste and texture will be affected).
  2. In a blender, put the hummous beans, tahini, garlic, lemon juice and olive oil. Blend. When the beans blend into the mixture and it becomes thick, slowly add the cold water - this step will make the mixture thinner and fluffy. Adjust according to your own tastes with more lemon juice, salt or tahini. It should have a sharp lemony taste and should be creamy in texture
  3. Serve with pita bread and/or baby carrots. Garnish with a few hummous beans, olive oil, cumin and/or parsley sprigs.
