Pork Roast With Sweet Spices And Pineapple
- 3 - 4 lbs. pork roast
- 2 onions, quartered
- 1 20 oz. can pineapple chunks
- 1 tablespoon chili powder
- 1 teaspoon clove
- 1/2 teaspoon allspice
- 1 cinnamon stick
- 5 garlic cloves, peeled
- 1/4 cup raisins
- 1 tablespoon cumin seeds
- In a large skillet on medium high heat, add olive oil. When the oil is shimmering, add the pork roast and brown on all sides.
- Meanwhile in your slow cooker, add onions, pineapple (juice reserved), chili powder, ground clove and allspice, cinnamon stick, garlic, raisins and cumin seeds.
- Transfer the pork to the slow cooker. With the reserved pineapple juice, deglaze the skillet and add to the slow cooker. Set to low for 8-10 hours.
