Banana Cake With Cream Cheese Frosting

  1. Preheat oven to 375 degrees
  2. Grease 3 - 9" round pans (use butter, then sugar, then flour)
  3. For Cake:
  4. In a large bowl, cream together butter and sugar.
  5. Add mashed bananas. Blend.
  6. Add sour cream. Blend.
  7. Beat in eggs. One at a time.
  8. Add vanilla and mix well.
  9. In a separate bowl, blend dry ingredients.
  10. Add dry ingredients to wet, mix, but be careful not to over beat.
  11. pour batter equally into the three prepared 9" pans.
  12. Bake at 375 degrees for 30-40 minutes, until a toothpick comes out dry from the center.
  13. Be sure to check after 25 minutes, as oven temperatures may vary.
  14. Cool on rack for 20 minutes; turn out onto individual plates covered with saran wrap.
  15. For Frosting:
  16. Blend together cream cheese and butter until very smooth.
  17. Add sugar and vanilla. Blend well.
  18. Refrigerate for 20 minutes while cakes continue to cool.
  19. Final assembly:
  20. Place first layer on a serving plate. Frost top lightly.
  21. Place second layer on top. Repeat.
  22. Place last layer on top, and do a crumb coat* of the frosting.
  23. Place in the freezer for 10 minutes to harden crumb coat.
  24. Cover cake with remaining frosting.
  25. Garnish the top with halved strawberries, mandarin oranges and blueberries.
  26. *A crumb coat, is a very thin layer of frosting that holds all of the crumbs in place.
