Fiesta Corn Salad
- 2 c fresh corn kernels
- 3/4 c water
- 14 oz can black beans, drained & rinsed
- 1/2 c chopped shallots
- 1/2 c chopped red pepper
- 1/4 c chopped fresh cilantro
- 1 small cucumber, chopped
- 2 garlic cloves, minced
- 2 T corn oil
- 2 T rice vinegar
- 1 T sunflower oil
- 1 T lime juice
- 1 t sweet red pepper flakes
- 1/4 t ginger
- 1/4 t salt
- Combine corn kernels and water in saucepan. Bring to boil; reduce heat. Simmer, covered, for 7-8 minutes or until tender; drain. Combine corn, beans, shallots, bell pepper, cilantro, cucumber and garlic in a bowl, mixing well.
- Whisk remaining ingredients in a bowl. Add to corn mixture and mix well. Chill, covered, for 2 hours.
