Fiesta Corn Salad

  1. Combine corn kernels and water in saucepan. Bring to boil; reduce heat. Simmer, covered, for 7-8 minutes or until tender; drain. Combine corn, beans, shallots, bell pepper, cilantro, cucumber and garlic in a bowl, mixing well.
  2. Whisk remaining ingredients in a bowl. Add to corn mixture and mix well. Chill, covered, for 2 hours.
