Broccoli Salad
- Dressing:
- 2 eggs
- 1/3 cup sugar
- 1 tsp. cornstarch
- 1 tsp. dry mustard
- 1/4 cup white wine vinegar
- 1/4 cup water
- 1/2 cup mayonnaise
- Salad:
- 4 cups fresh broccoli florets
- 1/2 cup raisins
- 8 slices bacon, cooked & crumbled
- 2 cups sliced fresh mushrooms
- 1/2 cup slivered toasted almonds
- 1/2 red onion, sliced
- 1/4 cup each sunflower seeds, dried cranberries
- Whisk eggs, sugar, cornstarch & dry mustard. Add vinegar & water and cook until thickened. Remove from heat & stir in mayonnaise. Cool.
- Pour cooled dressing over broccoli. Let sit for several hours. Add remaining ingredients and toss.
