Texas Style Chili
- 3 lb. boneless stew beef, cut into 1/2-inch cubes or 3 lb. lean ground beef
- 1 1/2 c. chopped onion
- 1 c. chopped green bell pepper
- 3 gloves garlic, chopped
- 2 tsp. oregano leaves
- 2 tsp. sugar
- 2 (28 oz.) cans whole tomatoes (undrained), broken up
- 2 c. water
- 1 (6 oz.) can tomato paste
- 8 tsp. beef flavor instant bouillon or 8 beef flavor bouillon cubes
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- In large kettle or Dutch oven, brown meat (if using beef, pour off fat).
- Add onion, pepper and garlic; cook and stir until tender.
- Add remaining ingredients.
- Cover; bring to a boil. Reduce heat; simmer 1 1/2 hours (1 hour for ground beef) or until meat is tender, stirring occasionally.
- Serve with corn chips and sweet pepper salsa.
