Self Saucing Chocolate Pudding
- 125g of butter, cut into pieces,
- 3/4 cup of castor sugar
- 2 eggs,
- 1 tsp of vanilla essence,
- 1 1/4 cups of s.r. flour
- 2 teaspoons of coffee powder,
- 2 tablespoons of milk
- 125g of chocolate, melted
- 2/3 cup of brown sugar,
- 1 tablespoon of cocoa,
- 1 cup of boiling water.
- Preheat oven to 180 degrees.
- Cream the butter and sugar together and beat until light and fluffy. Add eggs one at a time, beating well after each addition, beat in vanilla essence.
- Sift the flour and coffee powder together and fold into creamed mixture alternately with milk.
- Stir in chocolate and pour into a 6 cup casserole dish.Combine sugar and cocoa together in a jug, add water , stirring until sugar has melted and mixture is well combined.
- Pour this mixture over the pudding, bake for 50-55 minutes or until firm.
