Dieter'S Stir-Fry
- 1 lb. fresh or frozen flounder or cod fillets
- 1 small bunch fresh broccoli
- 2 Tbsp. vegetable oil
- 1 medium onion, sliced into 1/8-inch thick rings
- 1 rib celery, sliced
- 1 garlic clove, minced
- 1/2 tsp. dried oregano
- 1 tsp. salt
- dash of pepper
- 1 Tbsp. lemon juice
- Cut fish fillets into bite-size pieces.
- (If using frozen fish, let it thaw slightly.)
- Cut broccoli stems into 1/4-inch slices, reserve florets.
- In a wok or large skillet, heat oil just to smoking point.
- Add sliced broccoli, onion, celery, garlic and oregano; stir-fry over high heat for 5 minutes.
- Add fish pieces, salt, pepper and lemon juice.
- Bring to a boil.
- Add reserved broccoli florets.
- Reduce heat and simmer covered 5 to 10 minutes or until fish flakes easily with fork.
- Serve immediately.
- Makes 4 servings.
