Dieter'S Stir-Fry

  1. Cut fish fillets into bite-size pieces.
  2. (If using frozen fish, let it thaw slightly.)
  3. Cut broccoli stems into 1/4-inch slices, reserve florets.
  4. In a wok or large skillet, heat oil just to smoking point.
  5. Add sliced broccoli, onion, celery, garlic and oregano; stir-fry over high heat for 5 minutes.
  6. Add fish pieces, salt, pepper and lemon juice.
  7. Bring to a boil.
  8. Add reserved broccoli florets.
  9. Reduce heat and simmer covered 5 to 10 minutes or until fish flakes easily with fork.
  10. Serve immediately.
  11. Makes 4 servings.
