Crab Cakes
- 1 cp mayonnaise
- 8 scallions thinly slice
- 4 large, lightly beaten eggs
- 4 tbsp Dijon mustard
- 8 tsp fresh lemon juice
- 6 tsp Old Bay seasoning
- 4 lbs lump crab meat
- 5 cps Panko crumbs
- 4 tbsp thinly sliced chives
- 1 tsp Kosher salt
- 1/2 tsp freshly ground black pepper
- 8 tbsp vegetable oil
- Whisk first 7 ingredients in large bowl.
- Fold crab into mixture.
- Mix crumbs, chives, salt & pepper.
- Stir into crab mixture.
- Form into 16 1" patties.
- Put in refrigerator for at least 10 minutes.
- Butter bottom of 2 (14 x 9) baking pans.
- Add 8 patties to each pan.
- Bake at 375 deg for 20 minutes.
- Turn each patty over.
- Bake again for 15 minutes.
