Baked Chicken With Peppers And Ginger
- 1 whole chicken cut into pieces with innards discarded
- 1/2 large red bell pepper roughly cut in pieces
- 1 inch fresh ginger, peeled and sliced roughly
- 2 cayenne or thai peppers broken in pieces or to taste
- 3-4 pieces of lemon peel-yellow part only, each about 2 inches long
- 1/3 cup soy sauce
- 1 tbs onion flakes
- 2 tsp garlic powder
- 1/4 cup olive oil
- preheat oven to 425.
- in a minichop puree all ingredients except the oil to a puree
- spread puree under the skin and around each piece, placing in the 9x13 baking
- dish skin side up
- sprinkle with olive oil
- bake for about 20 minutes then reduce temperature to 350 and continue to bake for another 15-20 or until the internal temperature in the middle of the breast is 170
