Baked Chicken With Peppers And Ginger

  1. preheat oven to 425.
  2. in a minichop puree all ingredients except the oil to a puree
  3. spread puree under the skin and around each piece, placing in the 9x13 baking
  4. dish skin side up
  5. sprinkle with olive oil
  6. bake for about 20 minutes then reduce temperature to 350 and continue to bake for another 15-20 or until the internal temperature in the middle of the breast is 170
