Chicken And Spinach Bake
- 2 pkg. frozen, chopped spinach
- 1 (10 3/4 oz.) can chicken broth
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper
- 6 chicken cutlets
- 1/2 c. flour
- 3 1/2 Tbsp. butter
- 2 Tbsp. margarine
- 6 slices boiled ham
- 6 slices Swiss cheese
- 1/4 c. Parmesan cheese
- Defrost spinach and drain well. Distribute spinach evenly on the bottom of a rectangular baking dish.
- Pour chicken broth over spinach, then sprinkle with garlic powder and pepper.
- Dip chicken cutlets into flour.
- Melt 2 tablespoons of the butter and the 2 tablespoons of margarine and fry the chicken cutlets until light brown.
- Place the cutlets on top of the spinach.
- Place a slice of ham and Swiss cheese on top of each cutlet.
- Sprinkle Parmesan cheese over all and dot with remaining 1 1/2 tablespoons butter. Cover and bake in a preheated 375u0b0 oven for 20 minutes. Reduce heat to 350u0b0 and bake, uncovered, for 10 minutes.
