Taco Casserole
- 1 1/3 c. chicken broth
- 1 can cream of chicken soup
- 1 large onion, chopped
- 2 (4 oz.) cans chiles, diced (green)
- 8 oz. sour cream
- 10 (10-inch) corn or flour burrito style tortillas, quartered
- 2 1/2 c. cooked chicken, diced
- 8 oz. or more shredded Cheddar cheese (2 c.)
- sliced green onions
- 2 fresh tomatoes, chopped
- In saucepan, combine the first 4 ingredients.
- Simmer for 20 minutes.
- Cool slightly.
- Add sour cream.
- Set this gravy aside. In a 10 x 13-inch cake pan, lightly greased, layer the next 3 ingredients (2 or 3 layers).
- Spread gravy on top of each layer. Top with sliced green onions and tomatoes for garnish.
- Mild salsa may be used instead of tomatoes.
- Bake at 325u0b0 for 30 minutes in a 10 x 13-inch pan.
