Green Bean Almondine
- 1 lb. fresh green beans (whole)
- 1/4 lb. fresh mushrooms (halved & sliced)
- 1 small onion (sliced thin)
- 5 gloves fresh garlic ( crushed & chopped)
- 1/2 tsp. fresh ginger (minced)
- 1 cu. whole almonds (sliced thin)
- 3 tbsp. olive oil
- 1 tsp. fresh lemon juice
- 2 tbsp. flour
- pinch of basil
- pinch of rosemary
- cracked black pepper
- sea salt
- olive oil
- 1) Heat oil in pan, & saute garlic, & ginger for 2 mins. Add onion & saute until onion is softened.
- 2) Add mushrooms & almonds. Saute until mushrooms are cooked through.
- 3) move to side for later use.
- 4) Add 1/2 cu. water to same pan, & steam green beans, covered, till crisp-tender. Move to side with 1st ingredients.
- 5) Whisk flour into pan, scraping up bits. (Add a little more water if nessesary) Stir in lemon juice.
- 6) Return sauted veggies to pan, adding salt, pepper, basil, & rosemary.
- 7) Cook till mixture is thicked & bubbly.
