Boy Filling Lumberjack Cake
- 2 peeled & finely chopped apples
- 1 cup chopped dates
- 1 teaspoon bi-carb soda
- 1 cup boiling water
- 125g softened butter
- 1 teaspoon vanilla essence
- 1 cup caster sugar
- 1 X 60g egg
- COCONUT TOPPING
- 60g butter
- 1/2 cup firmly packed brown sugar
- 1/3 cup milk
- 1 cup shredded coconut
- Grease and line base of tin with baking paper. Combine the apples, dates, soda and water in a bowl. Stand mix covered for 10 min.
- Beat butter, vanilla and sugar in a bowl with electic mixer until combined. Fold in sifted flour alternately with apple and datre mix. Spread mix into prepared pan. Bake in a mod 180dg preheated oven for 50 0ven.
- To make topping
- combine butter, brown sugar and milk in a pan. stir over heat until butter is melted and sugar is dissolved. Stir in coconut.
- Remove cake from oven and spread with warm coconut topping. then return to oven and bake at 180c for a further 20 min or until topping is golden. Stand cake in pan for 5 min before turning onto a wire rack to cook completley
