Halibut With Atlantic Prawn, Coconut And Avocado Sauce
- 200g prawns
- 180g halibut
- 200g mashed potato
- 1 avocado
- 200 ml coconut milk
- 200 ml orange juice
- 100 ml white wine
- Salt
- Pepper
- Flour for dusting
- 15 ml olive oil
- 15 ml butter
- 2 carrots
- 2 parsnips
- 2 courgettes
- Fresh coriander
- Fresh dill
- Fresh ginger
- Peel vegetables & cut into slices and simmer for 2 minutes
- Boil the mix of wine, coconut milk & orange juice, fresh ginger small pinch of salt & white pepper until thick
- Warm up your portions of mashed potato
- Blanch prawns in white wine & a small dash of water for 1 minute
- Add avocado into prepared sauce, cook for 2-3 minutes then add your blanched prawns
- Season fish, dust with flour & pan-fry it in a mixture of olive oil & butter until golden brown, for around 5 minutes.
- On the plate arrange a nest of vegetables in the centre, place your fish on top with piped mash one side of the fish, on the other side arrange the avocado & prawns from your sauce & drizzle the remaining sauce around the plate.
- Garnish with desired fresh herbs.
