Pomme Frites With Roasted Garlic Aioli
- For Frites:
- 2 russet potatoes
- 6 cups veggie oil
- Salt & pepper
- For Aioli:
- 3 egg yolks
- 1 tbsp lemon juice
- 1 head of roasted garlic
- (300 degree oven for 45 minutes)
- 1/4 cup water
- 2 cups veggie oil
- Salt & pepper
- Heat oil in heavy bottom sauce pot to 300 degrees on candy thermometer. Slice potatoes to 1/4 inch fries. 'Blanch' fries in small batches until soft and cooked through. Drain on paper towels. Raise oil temp to 375 and cook fries until golden brown & crispy. Season with salt & pepper.
- For aioli:
- In food processor, place yolks, lemon juice, water & garlic and blend. While on, slowly drizzle in oil until sauce become thickened (to about consistency of mayo - or your own taste). Season with salt and pepper
