Fluffly Whole Wheat Walnut Waffles

  1. Waffles:
  2. Separate the egg whites and beat until fluffy. Beat together all the remaining ingredients until smooth. Fold in the egg whites. Fill a waffle iron and bake until golden brown. Serve with unsweetened applesauce and homemade syrup (see below)
  3. Homemade Syrup:
  4. Heat a small pot on high heat. Add sugar and heat until you see brown melted liquid or until a tiny bit of smoke appears (slightly burn the sugar). Immediately add the water. Stir in the maple and vanilla flavorings. Bring to a boil then simmer until all sugar pieces are dissolved. Store unused syrup in a container with a lid in the cupboard.
