Fluffly Whole Wheat Walnut Waffles
- Waffles:
- 3 C Whole wheat flour (best when freshly ground)
- 1 T Baking Powder
- 3/4 T Salt
- 1/3 C Chopped Walnuts
- 1 1/2 C Milk
- 1 1/2 C Buttermilk
- 1/4 C Olive oil
- 3 Eggs
- Homemade Syrup (better than store bought):
- 1 C Sugar
- 1/2 C Water
- 1/8 t Maple flavoring
- 1/8 t Vanilla flavoring
- Waffles:
- Separate the egg whites and beat until fluffy. Beat together all the remaining ingredients until smooth. Fold in the egg whites. Fill a waffle iron and bake until golden brown. Serve with unsweetened applesauce and homemade syrup (see below)
- Homemade Syrup:
- Heat a small pot on high heat. Add sugar and heat until you see brown melted liquid or until a tiny bit of smoke appears (slightly burn the sugar). Immediately add the water. Stir in the maple and vanilla flavorings. Bring to a boil then simmer until all sugar pieces are dissolved. Store unused syrup in a container with a lid in the cupboard.
