Skillet Recipe Swiss Steak
- 1 lb. beef round steak, cut 3/4-inch thick
- 2 Tbsp. all-purpose flour
- 1 Tbsp. cooking oil
- 1 (16 oz.) can tomatoes, cut up
- 1 small onion, sliced and separated into rings
- 1/2 c. sliced celery
- 1/2 tsp. dried thyme, crushed
- 2 c. hot cooked rice or noodles
- 1/2 c. sliced carrots
- Cut meat into 4 serving pieces.
- Trim fat.
- Combine flour, 1/4 teaspoon salt and 1/4 teaspoon pepper.
- With a meat mallet, pound flour mixture into meat.
- In a large skillet, brown meat on both sides in hot oil.
- Drain fat.
- Add undrained tomatoes, onion, celery, carrot and thyme.
- Cover and cook over low heat about 1 1/4 hours or until meat is tender.
- Skim fat.
- Serve with hot rice or noodles.
- Makes 4 servings.
