Skillet Recipe Swiss Steak

  1. Cut meat into 4 serving pieces.
  2. Trim fat.
  3. Combine flour, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. With a meat mallet, pound flour mixture into meat.
  5. In a large skillet, brown meat on both sides in hot oil.
  6. Drain fat.
  7. Add undrained tomatoes, onion, celery, carrot and thyme.
  8. Cover and cook over low heat about 1 1/4 hours or until meat is tender.
  9. Skim fat.
  10. Serve with hot rice or noodles.
  11. Makes 4 servings.
