Bean Bake
- 1/2 to 1 lb. hot dogs, cut into 1/2-inch pieces
- 2 (1 lb.) cans pork and beans
- 1 Tbsp. mustard
- 3/4 c. sifted all-purpose flour
- 2/3 c. corn meal
- 1 egg, slightly beaten
- 1/4 c. cooking oil
- 1/2 c. catsup
- 1/2 c. water
- 1 Tbsp. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 2/3 c. milk
- 1/3 c. finely chopped onion
- Combine hot dogs, beans, catsup, water and mustard in a 12 x 8-inch baking dish.
- Sift flour with sugar, baking powder and salt into mixing bowl.
- Stir in corn meal.
- Add egg, milk, oil and onion all at once to sifted dry ingredients.
- Stir just enough to combine.
- Spoon mixture over beans.
- Bake at 400u0b0 for 35 to 40 minutes until golden brown.
- Makes 8 servings.
