Pasta With Sun-Dried Tomatoes And White Beans

  1. Cook onion in medium skillet over low heat until soft, stirring occasionally. Add garlic and crushed red pepper; saute for 2 minutes. Add sun-dried tomatoes, beans, chopped parsley, 3 T of the basil, salt and 1/4 c. water; bring to a simmer. Cook for 10 minutes, stirring occasionally and adding extra water as needed to maintain consistency.
  2. Cook pasta; drain and place in large serving bowl. Add bean-tomato mixture; toss until well combined. Sprinkle with remaining basil and the cheese; garnish with parsley.
