Halibut Florida Style
- 3 halibut steaks-1 to 1 1/2 inches thick
- Grapefruit Butter Sauce:
- 1/4 c melted butter
- 1/8 tsp paprika
- 1/2 tsp salt
- 1/4 tsp marjoram
- 2 c grapefruit sections
- combine butter, paprika, salt, marjoram and juice from sectioning grapefruit (1 1/2-2 tbl)
- place halibut on aluminum foil on broiler pan
- brush fish with grapefruit butter sauce
- place in preheated broiler about 2 inches from heat
- broil under medium heat until fish is lightly browned-5-7 minutes
- turn fish, brush again and continue to broil about 5 minutes longer-basting several times with sauce
- anout 3 minutes before fish is done-place grapefruit sections on top
- brush again with sauce
- to serve:cut steaks in half
- garnish with additional grapefruit sections and parsley if desired
