German Potato Apple Stew
- 2 Tbsp. butter
- 1 1/2 c. sliced onion
- 1 Tbsp. flour
- 1 c. chicken broth
- 1 c. apple juice
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. caraway seed
- 1 1/2 lb. potatoes, unpeeled and cut in large chunks
- 1 lb. cooked ham, cut in large cubes
- 1/2 lb. pitted prunes
- 2 red apples, cored and cut in wedges
- Melt butter in a large covered saucepan.
- Saute onion in butter until golden.
- Stir in flour, gradually add broth, apple juice, lemon juice, salt and caraway seed, stirring until thickened.
- Add potatoes, ham, prunes and bring to a boil.
- Cover and simmer 15 minutes.
- Add apples, cover and simmer 15 to 20 minutes until potatoes and apples are tender, stirring occasionally.
