Licorice Lobster
- 4 licorice sticks
- 2 2 pound lobsters
- 1 fennel bulb sliced for
- grilling
- 1/2 cup Hellmans mayo
- 3 Tbls. melted butter
- 4 Tbls. chopped fresh tarragon
- 1 lemon
- sea salt and fresh ground black pepper
- Prepare grill.Make sure your flame is hot and steady. You will throw the licorice sticks right on top of the charcoal about 5 minutes before you put the lobster on the grill.
- Prepare lobster by blanching in a pot of salted water just until the shell turns red.About 3 minutes. Remove from pot let cool slightly and split lengthwise.Brush with olive oil and season with seasalt and pepper and place on grill shell side down.Also brush fennel slices with olive oil,season with seasalt and pepper and grill.Place cover on grill and let cook for 5 minutes.Remove lid and baste lobster and fennel again with olive oil. Turn lobster to meat side down and flip fennel over.Cook an additional 5 minutes with the lid down.While that is happening make a sauce for the lobster taking 1/2 cup hellmans mayo, 3 Tbls. melted cooled butter,4 Tbls. chopped fresh tarragon and the zest and juice of 1 lemon season with salt and pepper to you liking.Serve lobster in the shell with the fennel and sauce along side.
