Parmesan Fried Flounder With Tomato-Basil Butter
- Tomato-Basil Butter
- 1 tablespoon olive oil
- 1 small can tomato paste
- 2 teaspoons garlic, minced
- 1/2 cup butter, softened
- 2 teaspoons lemon rind, grated
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup fresh basil, minced
- Fish
- 1/2 cup flour
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup dry bread crumbs
- 3/4 cup parmesan cheese
- 2 eggs
- 1/4 cup butter
- 1/4 cup olive oil
- 1 pound flounder fillets
- 1.teat the olive oil in a small skillet. Saute garlic for 2-3 minutes. Add tomatoe paste and continue cooking for a couple more minutes. Combine tomato sauce, and remaining ingredients in food processor and process until smooth.
- 2.tombine the flour, salt and pepper in a shallow bowl or pie tin. Mix the crumbs and Parmesan cheese in another bowl. Have eggs ready in a third shallow dish.
- 3.teat the butter and oil in a large skillet
- 4.tip the fish first in the seasoned flour, then the eggs, and finally in the bread crumbs and Parmesan cheese
- 5.taute over medium heat for ?? minutes.
- 6.terve topped with tomato-basil butter
