Parmesan Fried Flounder With Tomato-Basil Butter

  1. 1.teat the olive oil in a small skillet. Saute garlic for 2-3 minutes. Add tomatoe paste and continue cooking for a couple more minutes. Combine tomato sauce, and remaining ingredients in food processor and process until smooth.
  2. 2.tombine the flour, salt and pepper in a shallow bowl or pie tin. Mix the crumbs and Parmesan cheese in another bowl. Have eggs ready in a third shallow dish.
  3. 3.teat the butter and oil in a large skillet
  4. 4.tip the fish first in the seasoned flour, then the eggs, and finally in the bread crumbs and Parmesan cheese
  5. 5.taute over medium heat for ?? minutes.
  6. 6.terve topped with tomato-basil butter
