Apricot Pecan Bread
- 1/2 cup boiling water
- 1/2 cup dried apricot
- 1/2 butter, softened
- 1/2 cup granulated sugar
- 2 eggs
- 21/2 cups all-purpose flour
- 1 tbsp magic baking powder
- 1/2 tsp salt
- 1/2 tsp hround cloves or ginger
- 1 cup milk
- 1/2 cup pecans, chopped
- 1.treheat oven to 350oF/180oC.
- 2.tour boiling water over apricots ad let them soak while you make the batter.
- 3.tream together the butter, sugar and eggs.
- 4.tdd the flour, baking powder, salt and cloves or ginger and mix until smooth. Drain apricots and chop coarsely.
- 5.tdd apricots, milk and pecans to batter. Spoon into a greased and floured 9" x 5" loaf pan. (Batter will be fairly stiff).
- 6.take for 45 to 55 min.
