Savoury Pancakes
- 4 oz plain flour
- pinch of salt
- 1 large free-range egg
- half a pint of milk
- sunflower oil
- bag of frozen chinese-style vegetables or other stir-fry mix.
- sweet chili sauce or hoi sin if liked, to serve.
- put flour and salt in large mixing jug, push up to sides and break egg into middle. Beat egg carefully with fork without disturbing too much flour, then gradually incorporate the flour into the egg. When necessary begin to add the milk a little at a time (keep mixing) until smooth batter achieved. Use more or less milk if required.
- in frying pan, cook vegetable mix, usually for about 4 minutes. Tip out onto a warmed plate and wipe pan if necessary.
- get frying pan hot with a dessertspoonful of oil in it, swirl carefully to coat pan.
- pour enough batter into pan to cover most of the base swirl to spread batter, cook for about 30 seconds each side, then add the vegetables, fold pancake around them and warm through for a couple of minutes. Serve immediately.
