Spicy Minestrone With Kale
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 3 cloves garlic, chopped
- 1 tablespoon chile pepper flakes
- 2 tablespoons tomato paste
- 1/2 bunch kale, chopped
- 1 32-ounce can crushed tomatoes
- 1 15-ounce can white beans
- Handful of small pasta, like ditalini
- 1 cup water
- Salt and pepper
- Grated parmesan to serve
- Heat oil in a heavy pot, add onion and garlic and cook for about 5 minutes. Add chile pepper flakes and cook 1 minute, add tomato paste and stir, cook 1 minute more.
- Add kale and toss to coat, cook about five minutes, until kale becomes slightly tender.
- Add canned tomatoes, white beans, and water, stir to combine. Bring to a boil. Toss in pasta and stir, then reduce heat and cook 15 minutes.
- Add salt and pepper to taste, serve with grated parmesan.
