Peanut Noodles
- 1/2 cup rice vinegar
- 1/4 cup fresh lemon juice
- 1/4 cup soy sauce
- 2/3 cup smooth peanut butter
- 1 Tablespoon Saracha
- 3 Tablespoons packed brown sugar
- 4 cloves garlic, minced
- 1 box whole wheat spaghetti, cooked
- 2/3 cup fresh cilantro
- 4 green onions, thinly sliced
- 1/4 cup chopped roasted peanuts
- To make the dressing, whisk together vinegar, lemon juice, soy sauce, peanut butter, garlic sauce, sugar, and garlic. Cook noodles according to package directions. Drain. Place the noodles in a large bowl with the cilantro and green onions. Add the dressing and toss to coat evenly. Sprinkle the peanuts on the top. Serve hot or at room temperature.
